Mac & Cheese recipe?

I'm picky about my mac & cheese! My favorite has to be Logan's! I don't like thick, chunky, sticky mac & cheese. Does anyone know the secret to making it like Logan's?









I never had the mac & cheese
I never had the mac & cheese at Logan's but I have one recipe for your kids with veggies and they can't tell! You can probably had probably more water so it's not to thick but I am sure the puree will help!
HEALTHY MAC AND CHEESE:
Directions:
Prepare macaroni and cheese according to directions on package. Add White Puree into the cheese sauce, mixing until well blended. If sauce becomes too dry, simply add an extra tablespoon of milk and extra cheese.
WHITE PUREE:
Ingredients:
2 cups cauliflower, cut into florets
2 small to medium zucchini, peeled and rough chopped
1 teaspoon fresh lemon juice
1-2 tablespoons water, if necessary
Directions:
Steam cauliflower in a vegetable steamer over 2 inches of water, using a tightly covered pot, for about 10 to 12 minutes until very tender. Alternatively, place cauliflower in a microwave-safe bowl, cover with water, and microwave on high for 8 to 10 minutes until very tender.
While waiting for the cauliflower to finish steaming, start to pulse the raw peeled zucchini with the lemon juice only (no water at this point). Drain the cooked cauliflower. Working in batches if necessary, add it to the pulsed zucchini in the bowl of the food processor with one tablespoon of water. Puree on high until smooth. Stop occasionally and push contents from the top to the bottom. If necessary, use the second tablespoon of water to make a smooth (but not wet) puree.
Makes about 2 cups of puree. Double recipe if you want to store even more, which can be done in the refrigerator for up to 3 days, or freeze 1/4 cup portions in sealed plastic bags or the small plastic containers.

Is this one of Jessica Seinfeld's recipes? I can't remember the name of her book. I've heard of this recipe. I will try it, and I won't tell my husband how I make it...he hates cauliflower!

Sneaky chef
This recipe is from Sneaky Chef but I just went to the library this morning and got the Deceptively delicious fron Jessica Seinfeld and she got some hummy recipes like mozarella sticks, sloppy joes, grilled cheese, salsa dip, bugers and much more... all with veggies and you can't tell. Just let me know if you would like some recipes! Good luck and let me know if your husband found out!

Ooohh...healthy mozarella sticks? I'd be interested in the sloppy joes too. I've actually thought about buying the book, but I didn't know if the recipes would be very time consuming. What do you think?

Mozzarella sticks
Preparation: 20minutes and makes 8 sticks.
1cup whole-wheat breadcrumbs
1 tablespoon flaxseed meal
1 tablespoon sesame seeds (optional)
1 cup shredded part-skim mozzarella
1/2cup cauliflor puree- (cut off florets and steam for 8-10minutes put in food processor/blender for ~2min, use only 1/2cup and freeze the rest for other recipes)
1 tabelspoon cornstach
nonstick cooking spray
1 tablespoon olive oil
1/4 teaspoon salt
1- In a bowl, toss breadcrumbs, flaxseed meal and sesame seeds.
2- In a second large bowl, stir together cheese, cauliflor and cornstach stir until well combined. Shape into eight 2x1/2inch logs. Gentle roll each log in the breadcrumbs mix, then wrap in aluminium foil or waxed paper and freeze for 20 minutes.
3- Coat skillet with cooking spray and set it over medium-high heat. When the pan is hot, add oil. Arrange mozzarella sticks in pan in single layer, being careful not to crownd them. Cook for 3-4minutes, turning occasionally, until crumb coating begins to brown. Sprinkle with salt and ketchup.
*** Low fat cheese is actually a better source of calcium by volume than full-fat, because removing the fat makes room for more calcium rich dairy.

Sloppy Joes
Prep:25minutes, serves 8.
1tablespoon olive oil
1/2cup chopped red onion
1/2cup chopped celery
2 cloves garlic, minced
1pound lean ground turkey or sirloin
1/2cup sweet potatoe puree
1/2cup butternut squash or red pepper puree
raw, finely chopped carrots(optional)
1/2cup reduced-fat low-sodium beef broth
1/2cup tomatoe paste
1tablespoon Worcestershire sauce
1 tablespoon chili powder or to taste
1/2teaspoon salt
1/8teaspoon pepper
8 whole-grain hamburger or hot dog buns
1-Coat large nonstick skilett with cooking spray and set it over medium-high heat. When skillet hot, add oil. Add onion, celery and garlic and cook until the onion start to soften(not brown), 3-4minutes.
2- Add the meat, breaking it up with wooden spoon and cook until no longer pink ~4-5minutes.
3-Add the vegetable purees, raw chopped carrots (if using) beef broth, tomatoe paste, Worcestershire sauce, chili powder, salt and pepper. Reduce the heat to low, cover, and simmer until the liquid is reduce by about one-half, 15-20minutes.
4- Spoon the mixture over the burns and enjoy!

Her recipes are not that bad; specially if you have some puree already made from your past recipes! I liked the book personally; go at the library before and see if those recipes are good for you. My husband found several ones... specialy the deserts!
