Fridays during Lent

What do you eat on Fridays during Lent? Do you cook, or do you tend to go out? We usually do PB&J or Mac 'n Cheese for lunch, but I have no ideas for dinners. I don't cook fish, so that's out. We usually eat out once a week, and I hate to go out on Fridays during Lent because we always feel like we are wasting our dinner out because we can't order what we want. So, I'd like to come up with a few EASY things I can make on Fridays. Anyone have any yummy meatless dishes?

I always have such a hard time figuring out what to make for dinner also. I think that his week because I have been sick we have had dinner out every night. That is not good. I will have to change that soon.

That was us last week, takeout or fast food. Both kids and I were sick, and my husband was busy helping with the kids.
Pizza...that's what we will have for dinner tonight! I just cleaned out the cabinets this morning and found three mixes that need used. Thanks!

super easy, hummy and fast
This is a super easy and hummy quiche. I do it with spinach but you can make it with any of your favorite vegetables.
Cook 1/4cup of onions; steam 1cup ½ of spinach. 1cup ½ of shredded mozzarella cheese or Swiss cheese. 1/3cup of corn meal and 1 tee spoon of dry basil. Add salt and pepper to taste. Take 5 beaten eggs and add all ingredients together in a bowl, mix well and poor into a frozen pie crust already made. Preheat oven 325 and cook for 40minutes. I normally cook the onions and spinach in the afternoon and put it in the refrigerator and at dinner time just add the other ingredients and in less then 10 minutes the dinner is cooking.

I eat nothing different than I usually eat.
Friday Dinners
We usually do pizza or fish, but if I am feeling creative we will do stuffed shells or spinach roll ups. You can buy frozen cheese ravioli and dinner is ready in five minutes. I have also done homemade mac and cheese with tomatoes baked in, the kids actually eat tomatoes this way:)

these are some of our meals. (the kids and I don't care for fish either--hubby does)
cheese pizza, tomato soup and grilled cheese sandwiches, perrogies, morning meals like eggs and potatoes, french toast, waffles(homemade, big and fluffy--filling), Egg salad sandwiches
sometimes with our tomato soup we also boil up some macaroni noodles for the soup--makes it a bit more filling.

fish stixs--the kids eat(cruchy not fish like !)
also my grandma use to fix us and we still do today a macaroni noodle boiled up and then put the noodles in a deep fry pan and add a container of cottage cheese to it. cook until the cheese is stringy. The kids like this too.

Lots of loaded baked potatoes durning lent.
Mexican rice w/beans
I like to use a mix for La Preferida Spanish rice and add some extras, they usually list several items on the box that you can add if you want such as black beans, corn, cheese, green chiles. You can put it on tortillas too and it makes a yummy mexican style wrap.
There are so many options
There are so many options out there if you like mexican food. You can make refried bean tacos (instead of the ground beef), chile rellenos (if you like to cook)or even shrimp ceviche is really good too. The ceviche is not time consuming and consists of no cooking, just lots of chopping of onions and chiles, but it's a great alternative if you don't like fish.

ceviche is...
ceviche is a shrimp dish that is very popular in the warmer months. It consists of shrimp,onions,green chiles,tomatoes,cilantro,lime juice, and a little salt. First, you take the cooked shrimp and chop it into bite size pieces or you can use the very small precooked shrimp too, then chop up your tomatoes, green chiles, onions, and cilantro into little peices and mix together. Then you want to add your lime juice to the mixture (I like to use real limes instead of the bootled lime juice, I use about 8), mix together well and add salt to taste, leave it set about 1/2 hour so the flavors can blend together and put it on some tostadas or Ritz crackers work just as well. There you have it, your own shrimp ceviche. This works well on summer days or just day I really dont feel like cooking. Think of it as a pico de gallo with shrimp. The kids like it too.
