We've all come down with a bug or allergies or something!  Even though I can't taste anything, a big pot of chicken noodle soup sounds so yummy!  Any good recipes out there?

You read my mind...

I was just thinking about posting something on here for some good home remedies for a sinus infection. I was in so much pain in my teeth, cheeks, and head. I went to the Urgent care and it turned out I do have a sinus infection...Chicken soup sounds excellent. I may be crazy but I looooove Mrs Grass soup. Not sure if you're wanting more of a recipe or something you can just pick up and make easily at home. But I highly recommend Bear Creek soup. They have the best soups I've ever had (including resturants). They do a chicken noodle soup, I believe you just have to add your own chicken. The minestrone and broccoli and cheese is excellent as well. Hope you all start to feel better soon!

OOORRRR....

A good recipe for minestrone would be great too!!!  That is another one of my favorites :)  Anyone have one similar to Olive Garden's?  YUM :)

Sinus infections are the worst too.  I thought at first that is what I have, but then my husband and both boys are feeling run down too, so either just the August allergies or a cold going around.

I'd rather not leave the house today, but I'll keep those soups in mind next time I'm at the store.  Sounds nice and easy!  Thanks!  My pantry is pretty well stocked, so I probably have more than enough around here to make something homemade.

Olive Garden's Pasta E Fagoli & Minestrone

This makes a lot of soup, but it's almost identical to Olive Garden's version! It freezes really well too!

Pasta E Fagoli
SERVES 10

Ingredients
3 teaspoons oil
2 lbs ground beef
14 ounces carrots, slivered
12 ounces onions, chopped
14 ounces celery, diced
48 ounces diced canned tomatoes
2 cups red kidney beans
2 cups white kidney beans
88 ounces beef stock
3 teaspoons oregano
2 1/2 teaspoons pepper
5 tablespoons fresh parsley, chopped
1 1/2 teaspoons Tabasco sauce
48 ounces spaghetti sauce
8 ounces dry pasta shell macaroni
Directions
1Sauté beef in oil in large 10 quart pot until beef starts to brown.
2Add onions, carrots, celery and tomatoes and simmer for about 10 minute.
3Drain and rinse beans and add to pot. Also add beef stock, oregano, pepper, Tabasco, spaghetti sauce and noodles .
4Simmer until celery and carrots are tender, about 45 minute.

Minestrone
SERVES 8
Ingredients
3 tablespoons olive oil
1 cup minced white onion (about 1 small onion)
1/2 cup chopped zucchini
1/2 cup frozen cut italian green beans
1/4 cup minced celery (about 1/2 stalk)
4 teaspoons minced garlic (about 4 cloves)
4 cups vegetable broth (Swanson is good *note: Do not use chicken broth!*)
2 (15 ounce) cans red kidney beans, drained
2 (15 ounce) cans small white beans or great northern beans, drained
1 (14 ounce) can diced tomatoes
1/2 cup carrot, julienned or shredded
2 tablespoons minced fresh parsley
1 1/2 teaspoons dried oregano
1 1/2 teaspoons salt
1/2 teaspoon ground black pepper
1/2 teaspoon dried basil
1/4 teaspoon dried thyme
3 cups hot water
4 cups fresh baby spinach
1/2 cup small shell pasta

Heat three tablespoons of olive oil over medium heat in a large soup pot.
Saute onion, celery, garlic, green beans, and zucchini in the oil for 5 minutes or until onions begin to turn translucent.
Add vegetable broth to pot, plus drained tomatoes, beans, carrot, hot water, and spices.
Bring soup to a boil, then reduce heat and allow to simmer for 20 minutes.
Add spinach leaves and pasta and cook for an additional 20 minutes or until desired consistency.
Makes about eight 1 1/2 cup servings.

Minestrone

After kchristine8 mentioned minestrone soup, I decided to make it!  I even made this exact recipe for the copy cat Olive Garden version!  I made it a year or 2 ago and it was very good, but not like Olive Garden's.  This time I found someone online that said the secret ingredient was adding a little red wine to the stock.  Unfortunately I am so congested I can't taste anything (it smelled good), so I'm not sure how close it was.  We are having leftovers tomorrow and my taster seems to be making a come-back, so I'll let you know :)  But my husband said he thought it tasted very close to OG's and he said it was excellent!  Good to know it freezes well too, because it really does make a TON :)  Thanks!!
