Bacon and Potato Chowder

Description
A great chowder for a cold day!
Ingredients
- 6 sli bacon cut to 1/4 in. pieces
- 1 c chopped onions
- 1 clv garlic minced
- 3 c potatoes diced
- 3 c water
- 3 chiken bouillon cubes
- 3 T Flour
- 1 c heavy whipping cream or 1 can evap. milk
Instructions
1. Fry bacon until crisp. Drain and use paper towel to soak up excess fat, but retaining 2 tbsp. drippings.
2. In a large pot, sautee onion and garlic with 2 tbsp bacon drippings.
3. Add potatoes, water, bouillon cubes to pot.
4. Heat to boiling, then cover and simmer until potatoes are cooked, then add bacon.
5. Mix flour with a small amount of whipping cream/evap. milk, making a paste.
6. Gradually stir in remaining whipping cream/evap. milk.
7. Add to potato mixture.
8. Cook over medium heat until mixture comes to a boil and thickens.
9. Stir often to ensure the soup doesn't burn on the bottom of the pot.
Notes
Add more water to thin to desired thickness.
You can also add any number of favorite ingredients to suit your taste. We've tried adding carrots, and corn and it was also great.
I always try to make the recipe with heavy whipping cream, but if I can't find a good deal on any then I will use evaporated milk.
